Saint Emilion Grand Cru Classé
This Grand Cru Classé of the Aubert family (more than a century) is beautifully situated at the entrance of the village of St. Emilion on the lime plateau. It is vinified by the pretty daughter Heloïse Aubert, who also owns Chateau Jean de Gué in Lalande Pomerol. The wine has a very soft and fine style and is completely vinified in small oak barrels. This new technique requires a lot of work because the barrels need to be turned 3 times a day (or stirred) for a maximal extraction. The advantage of this technique is that it renders a complex wine with lots of elegance. Michel Rolland also applies this technique at home for his Ch. Le Bon Pasteur. At Ch. La Couspade he is the advisor.
