Saint Emilion Grand Cru
This cru has a
sand-gravel terroir on a clay subsoil in the town of St. Emilion. Situated next
to famous Grand Cru Classés such as Ch. La Dominique, Ch. Cheval Blanc and in front
of Pomerol (Ch. Gazin, L'Evangile). The chateau is the only one which is biologically
certified for already 17 years and which vinifies without sulfites. They also own
an optical selection machine that only allows the ‘caviar amongst the berries’ into
the wine. The yields are extremely low (20.3hl/ha when 50hl/ha is allowed). The
chateau respects nature (no fertilizers), rivers and the health of their staff
and customers as much as possible. The wine ripens for 20 months on 50% new oak
and on 50% one-year-oak. The wines are not filtered, nor cleared. They have a
natural acidity that guarantees the conservation.
