Only 5.5 ha is provided for this white wine, vinified in Pauillac but which cannot use this appellation. The vinification is very particular: harvest parcel by parcel: There are 30 different zones for the vinification of the white wine. Besides, the berries are cooled and squeezed as soon as possible to maintain the intensity and qualities. Only 25% is vinified in steel, the rest is fermented directly in oak and with an oxosystem (a system with a barrel on wheels to easily turn it) that allows to mix the ‘lee’ with the juice. Besides, these oak barrels have their own cooling system inside to prevent oxidation. After the fermentation, the wine ripens further for 70% on 50% new oak, the other 30% stays in the cuvees. The result is a remarkably tasteful and expressive wine that can strive with the great Pessac Léognans.
